When I asked Max Blachman-Gentile if his pizza could sing, what would that be? What’s their dairy-oke song?
“It might have to be ‘No Scrubs.’ Can’t have any scrub pizzas around here,” said Blachman-Gentile, the craftsman and pizzaiolo behind Jules Pizza, a pop-up at Buddy, a wine bar at 3115 22nd St. between Capp and South Van Ness.
The pizzaiolo draws inspiration from familial roots – the name Jules comes not only from his Italian grandmother’s first name but also his partner Eliza’s grandmother’s first name.
Blachman-Gentile, said the essence of a perfect pizza lies in its dough—light, crispy, with a blend of cheeses atop that create a symphony of flavors.
“A classic cheese pizza is always my favorite at the end of the day,” he said.” It’s nice to have a blend of cheeses so that you get some umami, a little funk, and some sharpness to balance out the mild creaminess of mozzarella.”
Eliza Arnold, his partner, manages a full-time job as a creative director and heads up another company. Despite her busy schedule, she occasionally joins Jules events, especially at Buddy, contributing to the pizza magic and using her background as a creative director for branding and posters.
Blachman-Gentile’s journey to Buddy began in August thanks to his connection with partner Claire Sprouse from New York. He appreciates the collaborative spirit.”I’ve loved working with the team there, and it’s such a great space that aligns with the types of restaurants I have liked working in and what I’d want to have for myself one day,” he said.
Planning to establish their own brick-and-mortar space, Blachman-Gentile eagerly anticipates bringing his vision to life either later this year or early next year. In the meantime, you can find him at Buddy on Tuesday nights and elsewhere through their Instagram account.
